These cinnamon apple muffins can be a great part of a low carbohydrate diet (15 g net)- they are full of fiber and flavor and are a great option for breakfast or an on-the-go snack. They have ½ the sugar of a typical muffin, have filling fiber & heart healthy fats that keep you full for longer.
This recipe makes 12- feel free to double and freeze!
Ingredients:
Whole wheat flour ½ cup
Almond flour ½ cup
Coconut flour ½ cup
Oats 1 cup
Flax seed meal 2 tablespoons
Baking powder 2 tsp
Baking soda 1 tsp
Sugar ½ cup
Walnuts ¼ cup
Cinnamon powder ¼ tsp
Salt ¼ tsp
Apples-2, grated
Avocado oil ½ cup
Almond milk, unsweetened (any nut milk of your choice) 1/3 cup
Vanilla extract ¼ tsp
Method:
1. Pre-heat oven to 400 degrees. Line 12 muffin cups with liners.
2. Make 2 flax “eggs”- combine the 2 tablespoons of flax meal with 6 tablespoons of hot water, set aside.
2. Add all dry ingredients into a bowl and mix.
3. Add all wet ingredients (including the flax eggs & grated apple) into a separate bowl and mix.
4. Make a well in the middle of the dry ingredients and add the wet mixture.
5. Stir all together with a spoon. Mixture will be just moist. During this step, you can add a touch of extra nut milk to get all ingredients just mixed and moist.
6. Use a spoon to scoop batter into the muffin pan (about ¾ full)
7. Bake for 16-18 minutes (until toothpick inserted into center comes out clean).
8. Cool in pan for 5 minutes.
9. Finish cooling on wire racks.
